Ingredients:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
3 cloves garlic, minced
1/2 cup heavy cream
1 cup chicken broth
1 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
Salt and pepper to taste
8 oz pasta (penne, fettuccine, or spaghetti work well)
Fresh parsley for garnish (optional)
Instructions:
Cook the pasta: Begin by cooking the pasta according to the package instructions. Drain and set aside, reserving about 1/2 cup of pasta water.
Cook the chicken: While the pasta is cooking, heat the olive oil over medium heat in a large skillet. Season both sides of the chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for 6–7 minutes per side, or until golden and fully cooked through. Remove from the skillet and set aside to rest for a few minutes before slicing into thin strips or bite-sized pieces.
Make the creamy sauce: In the same skillet, add the minced garlic and cook for 1 minute, or until fragrant. Pour in the chicken broth, scraping the bottom of the pan to release any browned bits. Stir in the heavy cream and bring the sauce to a simmer. Let it cook for about 3–4 minutes, until it thickens slightly.
Combine and serve: Add the grated Parmesan cheese to the sauce and stir until it melts into the sauce, creating a creamy texture. If the sauce gets too thick, add a bit of the reserved pasta water to reach your desired consistency. Add the cooked pasta to the skillet, tossing to coat in the sauce. Stir in the cooked chicken, and season with extra salt and pepper if needed.
