Combining the classic cinnamon-sugar flavor of snickerdoodle cookies with a crunchy topping and a sweet fruit filling, this dessert is a crowd-pleaser that’s both easy to make and hard to resist. Whether you’re using fresh peaches or your favorite fruit filling, this recipe will elevate your dessert game and leave you craving more. Best of all, you can top it off with a big scoop of vanilla ice cream for the ultimate indulgence.

To make this Snickerdoodle Cobbler, you’ll start by preparing the snickerdoodle cookie dough, which is the foundation of this dessert. The dough is made with brown sugar, butter, and a generous amount of cinnamon-sugar, giving it that classic, comforting flavor we all love. Once your dough is ready, you’ll layer it in an 8‑inch pan, forming the base for the cobbler. Next, you’ll pour your fruit filling, such as sweet peaches or berries, over the dough. For an extra touch of flavor, you can add a few tablespoons of brown butter to give the dessert a rich, caramelized taste.

Ingredients:

  • For the Cobbler:
    • 1 cup all-purpose flour
    • 1/2 cup granulated sugar
    • 1 1/2 tsp baking powder
    • 1/4 tsp salt
    • 1/2 tsp cinnamon
    • 1/2 cup unsalted butter, melted
    • 1/2 cup whole milk
    • 1 tsp vanilla extract
  • For the Cinnamon Sugar Topping:
    • 1/4 cup granulated sugar
    • 1 tbsp cinnamon
  • For the Filling:
    • 2 cups apple or pear slices (optional, for fruit filling)
    • 1/2 cup brown sugar
    • 1 tbsp cornstarch
    • 1 tsp cinnamon
    • 1/4 tsp salt
    • 1 1/2 cups water

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Cobbler Batter:
    • In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon.
    • Add the melted butter, milk, and vanilla extract. Stir until everything is combined and smooth.
  3. Prepare the Filling:
    • In a small saucepan, combine the brown sugar, cornstarch, cinnamon, and salt. Stir in the water.
    • Bring to a boil over medium heat while stirring constantly. Once it begins to thicken, remove from heat.
    • If you’re using fruit, add the fruit slices to the saucepan and toss to coat with the syrup. If not, skip this step.
  4. Assemble the Cobbler:
    • Pour the filling (with or without fruit) into a greased 8x8-inch baking dish.
    • Spoon the cobbler batter evenly over the top of the filling.
    • Mix the granulated sugar and cinnamon in a small bowl. Sprinkle the cinnamon-sugar mixture over the batter.
  5. Bake:
    • Place the dish in the oven and bake for 35–40 minutes or until the cobbler is golden brown and bubbly. A toothpick inserted into the center should come out clean.
  6. Serve:
    • Let the cobbler cool for a few minutes before serving. It’s best served warm with a scoop of vanilla ice cream or whipped cream.

The most exciting part is the crunchy topping that forms as the cobbler bakes. The flour mixture creates a perfect crumbly crust over the fruit, while the snickerdoodle dough cooks into a golden brown, cookie-like layer. Baking the cobbler at 350°F for 30–35 minutes will result in a deliciously moist and slightly crisp treat. The sweet smell of cinnamon will fill your kitchen, and you’ll be left with an incredible, comforting dessert.
