Garlic Butter Steak Bites and Potatoes Recipe 

Ingredients

For the Potatoes:

  • ¼ cup ghee or but­ter, divid­ed
  • 1 tbsp olive oil
  • 1 lb Yukon gold pota­toes, cut into ½‑inch cubes
  • 3 gar­lic cloves, minced
  • 1 tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp sea salt (plus more to taste)
  • ¼ tsp ground black pep­per (plus more to taste)

For the Steak Bites:

  • 1 ¼ lbs sir­loin steak, cut into ½‑inch cubes
  • 2 tbsp ghee or but­ter
  • Addi­tion­al salt & pep­per to taste
  • 1 tbsp fresh pars­ley, chopped (for gar­nish)

Instructions

1. Cook the Potatoes:

  1. Heat a large cast iron skil­let over medi­um heat.
  2. Add olive oil and 2 tbsp of ghee to the pan.
  3. Once melt­ed, add the pota­toes and sprin­kle with gar­lic, thyme, oregano, salt, and pep­per.
  4. Cook for 2–3 min­utes, then stir and con­tin­ue cook­ing for 8–10 min­utes until gold­en brown and fork-ten­der, stir­ring every 1–2 min­utes to pre­vent stick­ing.
  5. Remove the pota­toes from the pan and set aside.

2. Sear the Steak Bites:

  1. Increase the heat to medi­um-high and add the remain­ing 2 tbsp of ghee to the pan.
  2. Once melt­ed, add the steak bites and sea­son with a pinch of salt and pep­per.
  3. Cook for 2 min­utes with­out stir­ring to get a nice sear.
  4. Stir and con­tin­ue cook­ing for anoth­er 1–2 min­utes until the steak is gold­en brown and cooked to your desired done­ness.

3. Combine & Serve:

  1. Return the pota­toes to the pan and stir every­thing togeth­er.
  2. Adjust sea­son­ing with more salt and pep­per if need­ed.
  3. Sprin­kle with fresh pars­ley and serve imme­di­ate­ly.
