Pineapple Chicken and Rice Recipe

Ingredients

  • 2 bone­less, skin­less chick­en breasts (or thighs)
  • 1 table­spoon olive oil
  • 1 cup rice (white or brown, as pre­ferred)
  • 2 cups chick­en broth (or water)
  • 1 fresh pineap­ple, peeled and cubed (or 1 can of pineap­ple chunks)
  • 2 cloves gar­lic, minced
  • 2 table­spoons soy sauce
  • 1 table­spoon hon­ey (option­al, for added sweet­ness)
  • Salt and pep­per to taste
  • 1/2 tea­spoon ground gin­ger (option­al for a hint of spice)
  • 1 table­spoon green onions, chopped (option­al for gar­nish)
  • Red pep­per flakes (option­al, for a lit­tle heat)

Step 1: Cook the Rice
Start by cook­ing your rice accord­ing to the pack­age instruc­tions. For white rice, bring the chick­en broth (or water) to a boil, add the rice, and sim­mer it for about 15–18 min­utes until it’s ten­der and all the liq­uid is absorbed. Set the rice aside when done.

Step 2: Cook the Chick­en
While the rice is cook­ing, heat the olive oil in a large skil­let over medi­um heat. Sea­son the chick­en breasts (or thighs) with salt, pep­per, and ground gin­ger if you like a hint of spice. Cook the chick­en for about 5–7 min­utes per side, or until gold­en brown and cooked through. Remove the chick­en from the pan and set aside.

Step 3: Pre­pare the Pineap­ple Sauce
In the same skil­let, add the minced gar­lic and sauté for about 30 sec­onds. Then, add the cubed pineap­ple along with soy sauce and hon­ey (if using). Let the pineap­ple cook for about 5 min­utes, allow­ing it to soft­en and release its juices.

Step 4: Com­bine Chick­en, Rice, and Pineap­ple
Once the pineap­ple sauce is ready, return the chick­en to the skil­let, plac­ing it on top of the pineap­ple. Add the cooked rice to the skil­let, stir­ring gen­tly to com­bine all the ingre­di­ents. Allow every­thing to cook for anoth­er 3–5 min­utes, so the fla­vors meld togeth­er.
