 Ingredients

For the Apple Mixture:

  • 2 medi­um bak­ing apples (peeled and chopped)
  • ½ cup light brown sug­ar
  • 2 tsp ground cin­na­mon (heap­ing)
  • 1 tsp ground gin­ger

Wet Ingredients:

  • 1 large egg (room tem­per­a­ture)
  • ⅓ cup white gran­u­lat­ed sug­ar
  • ¼ cup veg­etable oil
  • ¼ cup full-fat sour cream (room tem­per­a­ture)
  • 2 tsp vanil­la extract

Dry Ingredients:

  • 1 cup all-pur­pose flour
  • 1 tsp bak­ing soda
  • ½ tsp salt

For the Glaze:

  • 1 cup pow­dered sug­ar (sift­ed)
  • 1 tsp vanil­la extract
  • 3 tbsp milk (or cream/non-dairy milk)

 Instructions

✅ Step 1: Prep

Pre­heat your oven to 350°F (175°C).
Grease your 8x4” or 9x5” loaf pan with non­stick spray or home­made cake release.

 Step 2: Make Apple Mixture

In a medi­um bowl, toss togeth­er:

  • Chopped apples
  • Brown sug­ar
  • Cin­na­mon
  • Gin­ger
    Set aside.

 Step 3: Wet Ingredients

In a large bowl, whisk togeth­er:

  • Egg
  • Gran­u­lat­ed sug­ar
  • Oil
  • Sour cream
  • Vanil­la extract
    Whisk until smooth.

 Step 4: Add Dry Ingredients

In a sep­a­rate bowl, mix:

  • Flour
  • Bak­ing soda
  • Salt

Grad­u­al­ly add this to the wet mix­ture. Stir until almost com­bined.

 Step 5: Fold in Apples

Fold ¾ of the apple mix­ture into the bat­ter.

Bake at 350°F for 50–55 min­utes, or until a tester comes out clean (inter­nal temp should be 200°F).

Cool in the pan for at least 30 min­utes, then trans­fer to a wire rack to cool com­plete­ly.

Step 7: Glaze

Whisk togeth­er:

  • Pow­dered sug­ar
  • Vanil­la extract
  • Milk

Driz­zle over cooled loaf right before serv­ing.
